1/4 cup Sake Or Mirin (a Japanese Rice Wine)

2/3 cup long-grain brown rice (see headnote)

100g basmati rice , long grain rice or brown rice

1small red pepper , deseeded and finely chopped

½ cucumber , deseeded and finely chopped

2 tbsp toasted pumpkin seed or sunflower seeds

1 1/2 cups jasmine rice or basmati rice, well rinsed

3 cups Japanese short-grain rice, rinsed several times

2 cup rice milk (this makes the recipe dairy-free!)

1/2 cup mochi sweet rice (or just less. You need 20 teaspoons of rice)

1/8 tsp Saigon cinnamon (if your cinnamon is not that strong, add a bit more)

2 cups instant rice (such as Minute Rice)

1/2 teaspoon ground cinnamon, plus more for garnishing (optional)

½ lb. large shrimp (about 8), peeled, deveined, and quartered

1 3/4 cups toasted rice cereal, preferably Rice Krispies

1/2 cup salted roasted peanuts, coarsely chopped

2 cups cooked wild rice (or “instant” wild rice, wild rice blend, etc)
